Paride Chiovini Eros

Eros is a Colline Novaresi DOC rosé made from 100% Nebbiolo (locally called Spanna), given brief skin contact to draw out fruity aromas; the estate names it for the Greek god of love.

Tasting notes

A very intense, bright rosé. Intense, fresh bouquet recalling forest fruit, especially raspberry and strawberry, notably persistent, with vegetal notes recalling wildflowers. A very intense flavour of ripe fruit, tangy but well balanced, in harmony with a light tannin that makes the wine long and persistent.

Pairs well with

An all-purpose wine for white meat and fish dishes; its bright acidity and light tannin also suit fried dishes, especially battered vegetables, and it is excellent with simple tomato pasta.

Vineyard planting
Older vineyard parcels are planted at low density; despite their age they have reached productive balance thanks to well-developed root systems, which brings out the site's typicity. Newer plantings exceed 4,000 vines per hectare, laid out to make the most of sun exposure. All vineyard work, from winter pruning to summer green pruning, is done by hand to avoid stressing the vines.
Vinification
Destemmed and red-vinified for the first 18 to 24 hours, then drawn off and fermented at controlled temperature (20°C). Matured in steel for 5 months, bottled in late March, with a further two to three months' refinement in bottle. Yield: 60 quintals per hectare.
