Paride Chiovini Briseide

Briseide is a pure Colline Novaresi DOC Uva Rara (Bonarda), an elegant yet simple wine the estate names for Achilles' Trojan captive.

Tasting notes

Ruby red colour. An inviting, fine bouquet of forest fruit, macerated rose and spice, with an easy, broad palate, pleasantly acidic, saline and tangy, confirming the aromas with a rich, harmonious taste.

Pairs well with

A merenda wine, best with Novarese charcuterie: salame della duja and fidighino.

Vineyard planting
Older vineyard parcels are planted at low density; despite their age they have reached productive balance thanks to well-developed root systems, which brings out the site's typicity. Newer plantings exceed 4,000 vines per hectare, laid out to make the most of sun exposure. All vineyard work, from winter pruning to summer green pruning, is done by hand to avoid stressing the vines.
Vinification
Red vinification with maceration in steel tanks for 5 to 6 days at controlled temperature, with pump-overs every 8 hours. Malolactic fermentation in steel in December/January. Matured in steel for 5 months, bottled in April/May, with a further two to three months' refinement in bottle. Yield: 80 quintals per hectare.
Serving temperature
18-20°C
Storage
Ready to drink in its first 12 to 24 months, improving steadily through its first five years if well kept.
