A 100% organic Barbera from Rocca Grimalda, hand-harvested at full ripeness and averaging about 14% vol.
Tasting notes
Colour: intense ruby red with evident violet reflections, typical of the variety. Scent: winy, ethereal, with fruity notes. Taste: full, rich, persistent, with a composed rusticity.
Pairs well with
Accompanies the whole meal, especially cold cuts, pasta with meat or game ragout, and red meat main courses.

- Guyot training; most of the estate's vineyards are more than 90 years old
- Vinification
- Grapes are collected in a small bin, taken straight to the cellar and pressed; fermentation starts immediately. After about 10 days of maceration with frequent short pumping-overs the wine is racked, malolactic fermentation follows, winter cold stabilises it, and after clarification and filtering it is bottled. The Italian page describes a medium or long maceration, always in wood, with malolactic fermentation in the autumn.
