Tasting notes

Light straw yellow with light green reflections, a fine and creamy mousse and a very persistent perlage. Delicate, fruity and fragrant on the nose, with hints of fresh fruit and white flowers over a light background of bread crust. Lively and captivating on the palate, full-bodied and soft.

Fish-based appetisers, fried dishes, light pasta dishes, vegetable flans and soft cheeses, suitable for a whole meal

Vinification
After soft pressing of the whole grapes, selected yeasts (S. Cerevisiae) are inoculated and alcoholic fermentation runs at about 16 degrees C in temperature-controlled stainless steel tanks. After decanting and racking, the wine stabilises naturally over winter. Tirage, the second fermentation of the Champenoise method, takes place the following spring. After 42 to 48 months on the lees, the wine undergoes degorgement a la glace to remove the fermentation sediment and shape its character.
