Tasting notes

Bright straw yellow with appealing greenish highlights. Intense and characteristic on the nose, with hints of apricot and citrus over a very fine mineral background. Elegant and structured on the palate, slightly savoury and harmonious.

Vegetable and white meat appetisers, seafood salads, grilled fish, pasta dishes, shellfish and molluscs

Guyot training, 6,000 vines per hectare, maximum yield 5,000 litres per hectare
Vinification
Soft pressing of the whole grapes gives the free-run must. Yeast inoculation activates alcoholic fermentation at about 18 degrees C in temperature-controlled stainless steel tanks. Once fermentation ends, the wine stays on its fine lees with constant batonnage until bottling the following spring, in 0.75 litre Bordeaux bottles, then ages in bottle for 2 to 4 months.
