- First ten days of September, by hand, with grape selection in the vineyard
- Vinification
- White vinification with fermentation in wood: the must spends three or four days in stainless steel, then once alcoholic fermentation starts it moves to wood, where fermentation finishes, at 20 to 24 C. The wine is racked and returns to the barrels for a few months.
