- Espalier training with Guyot pruning (Simonit method), on the Caluso moraine hill facing Lake Candia
- Vinification
- Grapes destemmed and put in stainless steel vats. Spontaneous fermentation on the skins for 15-20 days. Aged on fine lees for 6 months before bottling.
