Tasting notes
Cherry pink with fine, persistent bubbles. Intense, fruity and floral nose, with delicate red fruit and violet. On the palate cherry, blueberry and currant, with a silky balance of acidity and softness.
Pairs well with
Aperitif, fish starters and delicate first courses.

- Vines 15 years old; 4,000 vines per hectare; yield 90 q per hectare
- Vinification
- Hand-picked grapes are destemmed and softly pressed, then macerated for 6 to 8 hours. Once fermentation has started, 25% goes into small oak barrels and the rest into temperature-controlled steel at 18 °C; the two parts are then blended in tank. Bottling for the second fermentation follows after 5 months. The wine spends 24 months on the lees, is disgorged, and rests a further 3 months in bottle before sale. Alcohol 13.2% vol.
