- Vinification
- Grapes are crushed and destemmed, then placed in vats with natural yeasts. The must is punched down and aerated until alcoholic fermentation is complete. After racking, the wine is racked several times for decanting and natural purification, followed by spontaneous malolactic fermentation at a controlled temperature. Further racking removes lees, and the wine matures naturally over winter to precipitate tartaric salts. Bottled for a minimum of 24 months refinement, or transferred to Tava terracotta amphorae for 9-24 months.
