- Grapes are picked into crates of no more than 18 kg and crushed gently in vats of no more than 25 quintals, with 2 to 3 pump-overs a day for the first three days and one a day afterwards. Malolactic fermentation runs spontaneously with native bacteria, with the cellar kept at 20 C or above. Skins stay in contact for at least 20 days of maceration, sometimes longer, which supports long ageing; bottled well after the other wines.
