Tasting notes
Intense ruby red with violet hues. Articulated bouquet of red fruit compote and wild prune (ramasìn). Tertiary aromas of licorice root, vanilla, biscuit and wet earth. Dense texture of soft tannins with balanced acidity. Warm and enveloping with fruity aromas and an interesting salty note. Long and persistent aftertaste.

Braised meats, bollito misto, aged cheeses, truffle dishes

- Bunches transported in boxes. Vinification in red at 29°C with selected yeasts. Frequent pumping over and délestage oxygenation. After malolactic fermentation, aged 9-12 months in barriques (25% new French oak, medium toasting). Further 6+ months bottle refinement.
