- The grapes are harvested by hand and placed in perforated crates to ensure the best preservation until the processing phase.

- The grapes are destemmed and the obtained must ferments spontaneously. Frequent pump-overs ensure color extraction, limiting the extraction of more aggressive tannins. After racking, malolactic fermentation follows and the mass is composed: assembling the wines in varying percentages in order to maintain constant characteristics of this product. After bottling, the wine, which has rested for a short period, is placed on the market.
