Made from 100% Barbera grapes from vineyards in San Cristoforo, it undergoes a controlled maceration process to achieve its characteristic hue. Vinification
The color of rosé wine (exactly like reds) is obtained from the maceration of the must with the skins for a variable period of a few hours. The maceration time depends on the coloring capacity of the grape, so it varies from year to year. At the end of maceration, the must is separated from the skins and transferred to a stainless steel tank at controlled temperature where fermentation begins. At the end of fermentation and subsequent maturation, the rosé wine is stabilized and filtered, then bottled and ready for sale.
