- Vineyard planting
- 6000 vines/hectare, planted in 1988, Guyot training system. Over the last 30 years, the leaf surface has been significantly increased compared to the quantity of bunches, in order to always obtain very high-quality grapes. Grape selection occurs mainly in the vineyard during the entire fruit set, veraison, and ripening phases. Three manual thinnings are performed to reduce production per hectare and make all bunches uniform, with homogeneous ripening.
- Vinification
- Alcoholic fermentation takes place in stainless steel tanks with a submerged cap, with control of fermentation temperatures and pump-overs; it finishes in about 15/20 days. It does not pass through wood but undergoes a slight refinement in stainless steel tanks, followed by natural decantation. All operations performed after alcoholic fermentation, up to and including bottling, are done by protecting the wine from contact with oxygen using Nitrogen. This way, there is greater preservation of the wine's aromas and coloring substances and a significant reduction in the use of sulfites.
