- Morainic soils of glacial origin, silt, red sands on clay with significant skeleton, porphyry, granite and pebbles of various colours and types, soils with very low pH.
- Harvest
- Manual harvest with selection and cleaning of the bunches in 18kg crates.
- Vineyard planting
- Vines range from 20 to 70 years old.
- Vinification
- Only spontaneous fermentations take place with indigenous yeasts present on the skins. No fining or stabilizing agents are used, and we do not filter. Sulfur dioxide is added in very small doses and sparingly depending on the year.
