VIV Winery, rooted in an ancient Piedmontese agricultural tradition, began producing wines in 2020, applying minimal intervention principles to both vineyards and winemaking. They embrace spontaneous fermentations, no filtration or fining, allowing the unique expression of grapes, vintage, and terroir to shine through. The family-run winery, located in San Marzano Oliveto, Piedmont, has renounced appellation certifications for most of its wines, including organic certification, to allow nature's infinite potential to express itself without predetermined rules.
