San Fereolo

San Fereolo is a biodynamic estate in Valdibà, a hillside hamlet of Dogliani, founded in 1992. Its 12 hectares produce about 45,000 bottles a year, from vineyards between 350 and 510 metres in Valdibà, San Luigi and Santa Lucia. The estate is built around Dolcetto: Dogliani San Fereolo, a blend of the best parcels, Dolcetto di Dogliani Valdibà, and the long-aged 1593. Alongside come Langhe Rosso Austri from Barbera, Langhe Nebbiolo Il Provinciale and a white of Riesling and Gewürztraminer called Coste di Riavolo. Grapes are picked by hand and fermented with native yeasts in oak vats, and the wines rest in large Slavonian oak. Dogliani lies just south of Barolo and is the home of Dolcetto, which is treated here as a red that can age.
