- **Vinification:** Hand-picked in small baskets. Low must yield: 4,500 kg of grapes make 2,650 litres of Pinot Noir must or 2,800 litres of Chardonnay must. First fermentation in steel vats for nearly three weeks, then the wine is chilled to let sediments settle. The cuvée is assembled in late winter from a single harvest. Second fermentation in bottle with about four years on the lees in a cool, dark place (at least 48 months). Riddling by hand on wooden pupitres, ice disgorgement, dosage of 8 g/l.

## Tasting notes

Very wide aromatic spectrum tending towards candied citrus fruits. The mouthfeel is very rich in matter and volume and sapid, as is typical of Alta Langa, with the same citrus notes on the palate.
