## Tasting notes

Intense ruby tending to garnet with age. Fine and elegant, with raspberry and violet and a delicate vanilla spice. Dry, warm and harmonious with good body, pleasant tannin and a long almond finish.

Medium-aged cheeses such as Fontina valdostana or pecorino; also tortelli in broth or grilled fillet.
