- **Vinification:** The grapes arrive at the winery after being hand-harvested in crates, then gently destemmed. Fermentation begins with regular wetting of the skins to encourage the extraction of colour and aroma, and continues at low temperature to preserve the aromas, followed by racking. The wine is then kept at 20°C to promote malolactic fermentation, and remains in stainless steel tanks for ageing and bâtonnage.

## Tasting notes

Ruby red with garnet reflections, broad and fragrant on the nose, elegant yet decisive, with notes of violet, cherry and strawberry. Full and harmonious on the palate, with a fruity, persistent finish.

Ideal as an aperitif, and excellent with pork roast in apple sauce, barbecue sauce and pasta dishes; its acidity and freshness also pair well with fish.
