- **Vinification:** After an initial green harvest following véraison, the grapes are hand-harvested in crates for further careful selection. At the winery they are destemmed and gently crushed to increase skin contact during alcoholic fermentation, which takes place in steel tanks at a constant, controlled temperature until the sugars are fully fermented. The wine is racked off its coarser lees and rests on its fine lees, which, together with the constant storage temperature, supports malolactic fermentation. It is aged in 25 hL oak barrels and partly in second use barriques, then ages further in bottle before release.

## Tasting notes

Deep ruby red with delicate orange hues from extended ageing, an intense, persistent bouquet of vanilla, ripe red fruit and boise, full bodied on the palate with balanced acidity.
