- **Vinification:** The grapes are hand-harvested and cold macerated, then gently pressed. Static clarification and slow fermentation follow at low temperature. Once fermentation is complete, the coarser lees are partly removed while the wine rests on its fine lees for six months with regular bâtonnage; it is then bottled and aged a further six months before release.

## Tasting notes

Pale yellow with golden highlights, full bodied with a long finish, intense aromas of dried fruit, honey and walnuts, and a very persistent aftertaste.
