- **Vinification:** Traditional vinification on skins with twenty days of maceration and full malolactic fermentation carried out after the alcoholic fermentation. The two varieties are vinified separately and blended only before bottling. Aged in French oak barriques for twenty-eight months, followed by further bottle ageing before release.

## Tasting notes

Colour: deep, intense ruby red with a barely perceptible violet edge. Bouquet: intense and persistent, with notes of chalk, ripe fruit, rose, pepper and chocolate. Taste: full, delicate and harmonious, echoing and enhancing the bouquet, with a pleasant, lingering finish of macerated fruit and minerality.

## Food pairings

The structure of the Cabernet Sauvignon and the acidity of the Barbera make this wine ideal with red meat and medium aged cheeses, as well as pasta dishes with meat or vegetable sauces.
