- **Vineyard planting:** High density of vines with strict selection of grapes for each plant to increase concentration.
- **Vinification:** Red vinification with floating cap fermentation at controlled temperature, followed by ten to twenty days of submerged cap post-maceration. Regular daily pump-overs and periodic delestage. Full malolactic fermentation follows the alcoholic fermentation. Aged in French oak barriques for twelve months, then a further sixteen months in Slavonian oak casks. About ten months of bottle ageing before release.

## Summary

Produced since 2001 from the Monte Colombo vineyard in Cassine, made only in the best vintages, with an imposing yet harmonious structure.

## Tasting notes

Colour: intense, deep and bright ruby red. Bouquet: strong, rich aromas of red fruit, raspberry and cherry in spirit, with spicy notes and coffee bean nuances adding complexity. Taste: mouthfilling, full, powerful and characterful, with elegance and freshness giving good balance and persistence.

## Food pairings

Ideal with rich pasta dishes and richly seasoned red meat. Also excellent with medium aged hard cheeses.
