- **Production area:** Heart of the commune of Barbaresco. The Gaiun vineyard is part of Martinenga, on the western side of the amphitheatre. South facing at an altitude between 230m and 290m a.s.l.

- **Vinification:** Vinification on skins with eight to ten days of fermentation with floating cap at controlled temperature, followed by twenty to thirty days of maceration with submerged cap and daily pump-overs. Malolactic fermentation follows the alcoholic fermentation. Aged in French oak barriques for twenty-eight months, followed by bottle ageing before release.

## Summary

Produced since 1982 only in the best vintages, from a selected parcel of the Martinenga vineyard toward Asili, with a more international style from French oak ageing.

## Tasting notes

Colour: intense, brilliant garnet red with copper reflections. Bouquet: deep notes of sweet tobacco, liquorice and black pepper, mingled with chocolate and balsamic notes. Taste: elegantly structured and harmonious, with a fine, silky tannic texture.

## Food pairings

Ideal with wild game, red meat and aged, hard cheeses. Worth trying with dark chocolate.
