- **Vinification:** After a period of overripening (appassimento) of the Grignolino in the vineyard, the grapes were fermented together in a single vat at about 28°C in stainless steel tanks, with malolactic fermentation also in steel. Aged 30 months in French oak barriques and a further 24 months in bottle before release.

A Barbera, Syrah and Grignolino blend that includes appassimento-dried Grignolino, aged 30 months in French oak barriques.

## Tasting notes

Intense ruby red colour with violet highlights tending toward garnet. A dense wine, rich in higher alcohols. Aromas of red fruit, cherry, sour cherry, forest berries and evolving exotic fruit, with citrus notes balanced by spiced vanilla and toast. The palate echoes the same descriptors, with dried fruit and black pepper notes; great structure, softness and balance.

Substantial red meats and rich, fatty cheeses such as camembert, gorgonzola and medium to long-aged blue cheeses.
