The must is held at about 5°C for 36 hours on fine lees with bâtonnage, settled statically, then fermented about 15 days in a 50 hl wooden vat. The wine ages about a year in tonneaux (10% new) without bâtonnage, favouring evolution in reduction until bottling.

## Summary

A Chardonnay made in a few thousand bottles from Fontanile and Castel Boglione, barrel-aged about a year; the family says it shows best after 3 or 4 years in bottle.

## Tasting notes

Fine, intense, pleasant bouquet with citrus and pineapple and a slight buttery note. Deep straw yellow. Savoury, graceful and well structured, rich, fresh and persistent.

Tajarin with white truffle, raw scampi, pizza with buffalo mozzarella or apple glara.
