- **Vinification:** Grapes are crushed whole in a pneumatic press with protection from oxidation. After a few hours of skin maceration the must ferments in stainless steel at 16 °C and ages 8 months on the fine lees. Bottled in June after harvest, then at least 18 months in bottle.

A Rhine Riesling grown at about 600 m in Cissone, in Alta Langa, where Riesling has been trialled since 1975.

## Tasting notes

Golden yellow with green nuances. Intense, typically mineral aroma with hints of green apple, dried flowers and a spicy finish. Crisp and dry on the palate, elegant, savoury and lively with a good acidic vein.

Suitable for aperitifs, appetizers, shellfish and fish dishes, pasta and risotto; it can also be enjoyed throughout the meal.
