- **Vinification:** Grapes crushed-destemmed immediately, dry ice added to must in tank, 24-hour cryomaceration; after only 6 hours of cryomaceration, 30% of the liquid is drawn off (saignee) and that portion is fermented in temperature-controlled steel tanks at 11 degrees for about 25 days, followed by 30 days decanting at 3 degrees; aged entirely in steel for at least 18 months before bottling.

## Summary

A Langhe DOC Rosato produced by the saignee method from Nebbiolo grapes on the Cru Canova, with an annual production of about 1400 bottles.

## Tasting notes

Rose colored with hints of purple. Aromas of rose, cherry, currant, grapefruit. Full palate of great freshness, with silky tannins, complexity and minerality, integrated and enveloping acidity.
