- **Vinification:** Soft pressing of Nebbiolo, classic alcoholic fermentation in steel at 30-32 degrees with daily pumping-overs and 14 days maceration; must kept in constant motion for about 3 months for mannoprotein extraction, clarification and malolactic fermentation; 54 months aging in 10 hl French Allier oak / Slavonian oak casks, then finished in steel for pre-bottling; 2 further years of bottle aging before release. Also produced in large formats (Magnum, Jeroboam, Methuselah). Produced only in years the estate considers exceptional; other vintages are used for the Barbaresco Canova.

## Tasting notes

Bright, lively garnet. Spirit-macerated fruit, cloves, dried walnut, with secondary notes of gentian and sweet pipe tobacco, great minerality on the finish. Very full-bodied palate with rich, taut tannins, soft fruit giving way to flavor and an important acid vein, almond-like finish.
