- **Vinification:** Six days of fermentation with native yeasts, manual punch-downs and délestage, then steel for malolactic fermentation. It is kept over winter under its own carbon dioxide and stabilised by the cold, with the cellar windows open. It is bottled in spring when the temperature passes 20 C, and sold after at least six months. Five months in cement and three in bottle. Alcohol 13.5%, residual sugar 0 g/l, total acidity 5.7 g/l, pH 3.5. Production 1,500 to 2,000 bottles a year.

## Summary

Organic red with no added sulphites, from native grapes, made by a manual method developed by the family. The name means 'no problem'. Part of the family's Radici e Filari line.

## Tasting notes

Ruby red. Delicate, persistent nose of red fruit. Pleasantly dry and medium-bodied, with notes of fresh plum.

## Food pairings

Pulses, first courses and complex main courses; the producer likes it through a whole meal, especially as an aperitif.
