- **Vinification:** Hand-selected native white grapes, made in a more classic way: the must stays on the skins only briefly. Spontaneous fermentation in wooden barrels (acacia), partly new, then 10 months on the lees with periodic bâtonnage. Bottled and rested in a historic balmetto cellar until ready. No corrections, fining or filtration. First vintage 2021; 909 bottles on the tech sheet.
