- **Vinification:** Manual harvest into crates, destemming-crushing, cold maceration for 12 hours, pressing and static clarification at about 8°C for 48 hours. Fermentation in stainless steel, interrupted using cold. Two bottlings, one in November and one at the end of February, with an optional third in April. 15,000 bottles produced.

## Tasting notes

Intense yellow colour, fragrant and aromatic bouquet with light notes of mandarin, grapefruit, white peach, flowers and sage. Refreshing, sweet and aromatic on the palate.

## Food pairings

Pairs well with classic Italian desserts, and also with lightly aged cheeses, salami and figs, or as an aperitif; some serve it with grilled prawns.
