After alcoholic fermentation the wine is chilled to 4-5°C to avoid malolactic fermentation, then aged about 12 months in an inox steel tank on the original primary-fermentation lees, with periodic bâtonnage (lees stirring) to enhance mouthfeel and aromatic complexity.

## Tasting notes

Deep bright straw yellow. Intense nose of white flowers, hints of rosemary, sage and chamomile. Fruity with a typical almond note in the finish, nice mineral notes, full bodied with a very long aftertaste.

Starters and pasta dishes, fish and crustaceans thanks to its mineral, dry character; also a good aperitif.
