- **Production area:** Vineyards at 700 m altitude in the comune of Bossolasco.
- **Soil:** Medium-textured, made up of silt, clay and sand, with whitish calcareous marl
- **Exposure:** South-east, on steep terrain typical of the Alta Langa
- **Harvest:** Late August/early September
- **Vinification:** Grapes are chilled in cold storage before being gently pressed. The must obtained, after an initial settling, ferments in steel tanks. At the end of fermentation the wine is moved partly to barrique and partly to botte, where it stays on fine lees with repeated bâtonnage. It is then transferred back to steel and prepared for tirage (bottling for the second fermentation). Dosage: Pas Dosé.
- **Storage:** Bottles are then kept lying down for over 30 months in contact with the lees. After remuage (rotating the bottle to bring the sediment to the neck), the bottles are disgorged to remove the crown cap and the fermentation lees, then topped up and sealed with a cork.

## Tasting notes

Bright straw yellow in the glass. Floral and fragrant on the nose, with notes of bread crust, pastry biscuits, croissant and toasted hazelnut. Enveloping and elegant on the palate, with a fresh, mineral acidity that gives finesse. The perlage is fine and enveloping.

## Food pairings

Aperitif with cured meats and cheeses. Raw fish antipasti. Pasta and white meat mains. Baked fish.
