- **Vineyard planting:** Guyot training; most of the estate's vineyards are more than 90 years old
- **Vinification:** Grapes are collected in a small bin, taken straight to the cellar and pressed. The must is separated from the pomace after about 3 hours, so the colour transfers only partially, and the rosé is racked. Fermentation finishes and malolactic fermentation begins; the wine is moved outside in late autumn and stabilises in the winter cold, ready for bottling in the first week of February.
