- **Vinification:** Grapes are collected in a small bin, taken straight to the cellar and pressed; fermentation starts immediately. After about 10 days of maceration with frequent short pumping-overs the wine is racked. The still-warm must lets fermentation finish and malolactic fermentation begin, winter cold stabilises the wine, and after clarification and filtering it is bottled. The Italian page adds a short maceration of 5 to 6 days in wooden barrels, with malolactic fermentation occurring spontaneously in the autumn in the underground cellar (18 to 20 C), so the wine is bottled in the first months of the year.

Colour: intense ruby red with evident violet reflections, typical of the variety. Scent: winy, ethereal, with fruity notes. Taste: full, rich, persistent, with a composed rusticity.
