- **Vinification:** Grapes are collected in a small bin, taken straight to the cellar and pressed; fermentation starts immediately. After about 10 days of maceration with frequent short pumping-overs the wine is racked, malolactic fermentation follows, winter cold stabilises it, and after clarification and filtering it is bottled. The Italian page describes a medium or long maceration, always in wood, with malolactic fermentation in the autumn.
