- **Vinification:** Generous bleed (salasso) to avoid bitter notes and aggressive tannins; fermentation in 50 hl French oak tini, 12-16 days skin maceration with gentle pump-overs, maximum fermentation temperature 26C, inspired by the Kyoto tea ceremony to obtain sweet tannins and pure aromas. Aged 18 months in 30 hl French oak barrels, then a further 12 months in 400 litre ceramic amphorae, followed by 9 months in bottle.
