- **Vinification:** Fermentation in 50 hl French oak tini, 10-14 days skin maceration with gentle pump-overs. Aged 6 months in large 80 hl oak barrels and 500 litre French oak tonneaux (first and second passage), then a further 8 months in 400 litre ceramic amphorae, followed by 3-4 months in bottle.
