- **Vineyard planting:** Guyot training, density approx. 4500 vines/ha, yield 28-32 hl/ha depending on vintage, often reduced by green harvest (salasso). Farmed under SQNPI protocols.
- **Vinification:** The three crus are vinified separately in 50 hl French oak tini, with 10-15 days of skin maceration and gentle pump-overs, fermentation temperature kept below 26C for delicate colour/tannin extraction, then drawn off 'to taste' and blended. Aged 12 months in approx. 50 hl French oak barrels, then a further 14 months in 400 litre ceramic amphorae, followed by 6 months in bottle.
