- **Vinification:** The three varieties are fermented separately (Dolcetto 4-6 days at 26-28C, Barbera and Nebbiolo 6-8 days at 27-29C), each resting on its lees at least two months, then a 3 to 4 month cold rest before blending. Refined about 8 months, bottled a few months after.
