- **Vinification:** Fermented and macerated on skins at least a week at 28-32C in thermo-conditioned steel tanks, then kept on its lees at 20-22C for at least two months to complete malolactic fermentation. Aged about 20 months, partly in new and once-used oak barriques (225 L), and released after at least 4 months further in the cellar.
