- **Vinification:** The three varieties are fermented separately (Dolcetto 4-6 days at 26-28C, Merlot and Nebbiolo 6-8 days at 27-29C), each resting on its lees at least two months, then a 3 to 4 month cold rest before blending. Aged about 12 months, part in oak barrels, bottled about a year after harvest.
