- **Vinification:** Maceration on the skins in stainless steel tanks at a controlled temperature for 10-15 days, before pressing; alcoholic fermentation finishes in stainless steel (about 20 days), where malolactic fermentation also takes place at a controlled temperature. Towards December the wine moves to small oak barrels, 15-20% new and 80% used, for 24 months. After decanting in stainless steel, it is bottled without fining or filtration.
