- **Vinification:** Harvested in the coolest hours of the day using dry ice, then cryo-macerated at 0C for 24 hours to extract aromas from the skins. Fermented in temperature-controlled stainless steel at 13C/55F for 15 days. Aged 4 months in stainless steel.

## Summary

Grown on one of the highest, steepest plots in the area, a heroic vineyard worked mostly by hand. A very mineral, fresh and fragrant white.
