- **Vinification:** After careful hand selection at harvest and a soft pressing, the Sauvignon Blanc ferments at about 16 °C in stainless steel until two thirds of the fermentation, then finishes in 500 L barrels. It ages about eight months in second-passage French oak tonneaux on fine lees (battonage), is racked in June, filtered and bottled in July, then rests six months in bottle before release.

A 100% Sauvignon Blanc from a 0.30 ha vineyard in Castagnole delle Lanze, finished in barrel and aged about eight months in oak.

## Tasting notes

Straw yellow with greenish reflections. On the nose, tropical fruit, orange blossom and citrus zest with a light background of tomato leaf. On the palate fresh and persistent, with bergamot and aromatic herbs joined by mineral notes. Long, clean finish.
