- **Vinification:** After careful hand selection, the whole grapes are gently pressed. The must is clarified, filtered and rested in a cold room at 0 °C for about 20 days. Fermentation takes place in autoclave at 14-16 °C and is stopped at 5.5% alcohol and 2.5 bar of pressure by bringing the temperature to -4 °C. Residual sugar is around 120 g/l. The wine stays in autoclave about 40 days at low temperature and 2.5 bar overpressure.

## Tasting notes

Straw yellow. The fragrant aroma typical of the grape gives elegant, musky scents with notes of sage, orange and peach. On the palate sweet and fresh, with a savoury finish.
