- **Vinification:** Grapes dried on racks in naturally ventilated spaces between September and October, then gently pressed with skin selection for maceration. Fermentation runs at controlled temperature for up to 6 months and stops naturally from the concentration of sugar and alcohol, without filtration. Aged 2 years in old wood barrels. Alcohol 13% vol.
- **Serving temperature:** Store the bottle lying down, in a cool, dark place; serve at 12°C in small glasses for passito and meditation wines. Keeps well for several days after opening; can age for decades.

## Tasting notes

Intense golden yellow with amber hues. Intense aroma of jam, candied citrus and cooked apple, with sweet spice. Sweet, with dried fruit and spice, in elegant balance with lively acidity and savour.

Suited to special occasions; good with foie gras, blue cheeses and dry pastries.
