- **Vinification:** After soft pressing of the whole grapes, selected yeasts (S. Cerevisiae) are inoculated and alcoholic fermentation runs at about 16 degrees C in temperature-controlled stainless steel tanks. After decanting and racking, the wine stabilises naturally over winter. Tirage, the second fermentation of the Champenoise method, takes place the following spring. After 42 to 48 months on the lees, the wine undergoes degorgement a la glace to remove the fermentation sediment and shape its character.
